Tapioca Pearls, also known as boba or bubbles, is a traditional Taiwanese topping often served in teas or as a dessert. These pearls provide a chewy texture, often described as QQ, to whatever it is added to. The 2.3mm size tapioca is your industry standard size for boba. Add honey, raw cane sugar, handcrafted brown sugar syrup, or any sweetener of your choice to get that perfectly sweet flavored pearl.

Tapioca is cooked using a 1:6 ratio of Tapioca to Water.

  1. Bring water to a boil. Once boiling add in the dry tapioca and stir occasionally (every 5-10 minutes) to avoid sticking and scalding. Boil for a total of 33 minutes.

  2. After boiling now turn off the stove, leave the pot on the stove, and continue to steep for a total of 33 additional minutes. Continue Stirring occasionally during the steeping duration to avoid the tapioca clumping together.

  3. Once the boiling and steeping are done rinse the cooked boba with water to remove any extra starch.

  4. Finally flavor with your desired sweetener 

To achieve your desired texture (softer or firmer) try adjusting the cooking and steeping duration to create your perfect pearl. 

Note: tapioca is best consumed within 4 hours of cooking. Do not store cooked tapioca in the refrigerator, this will cause it to harden and lose its QQ texture.

Storage Directions:

Store at room temperature and avoid exposure to excessive light. Once opened ensure tapioca is stored in an airtight container. Tapioca should be handled with care, excessive force may cause uncooked tapioca to crumble.
